I probably have posted this recipe a long time ago so here is a REFRESHER!

Pan American Pork Chops

4 Pork Chops, trimmed
1 28oz. can diced tomatoes
1/2 tsp oregano
1 Tblsp. chopped parsley (dried or fresh)
1/2 tsp. onion powder
1 tsp. salt   1/2 tsp. black pepper
1 tsp. lemon juice
1/2 tsp. celery seeds
1 tsp. chopped Basil
1 Tblsp. Soy Sauce
1 cup Beef broth (also can use chicken)
3 Tblsp. oil

Cooked Rice for 4 servings (or 2 cups)
In bowl, mix all ingredients except the chops, oil and rice
In fry pan brown chops in oil on both sides.

In Pam sprayed baking dish place cooked rice in bottom, place chops on top of rice
and pour tomato mixture evenly over chops.
Bake 30 to 45 minutes in 350° oven, or until chops are done.
Turn oven off, cover chops with foil and let sit in oven for 5 minutes before serving.
