Along with the pumpkin ones, I also sent in some Tiramisu cuppys. This is NOT my normal Tiramisu recipe, but it does work when you are not going to be around to cut the servings yourself. Works in a pinch, good for picnics, etc.
Also, rather easy to pull off.

Here's the list:

1 box of white cake - made as directed on the box ... only fill the cupcake liners about half way. You will have plenty of cake left over to make a small cake too in a loaf pan, if you'd like.

Coffee Syrup - Simple syrup made with 2 parts sugar to 1 part strong coffee, and boiled to the consistency of maple syrup (real stuff)

Mascarpone Frosting :  1c. whipping cream + 1/2 c powdered sugar + 8oz mascarpone cheese @ room temp whipped together

Cocoa Powder to garnish.

Poke holes into the cooled cupcakes, and spoon on the syrup. Make sure you let it soak in well, then spoon on some more. The bottom of the cupcake should end up lookin' coffee stained/soakd. Pipe on the Mascarpone frosting & dust it with cocoa powder. If you like more chocolate, you can mix choc. chips into the frosting as well, or garnish with shaved chocolate ... just depends on what works at the moment.
Refrigerate over night, or for at least 4 - 6 hours. Great in the afternoon with coffee, or after any great italian dinner.

Yep yep and double mmm! I have actually had these that she made. I ate two, and she only brought about 12 LOL. Some graham cracker crust type stuff, and chocolate, and caramel and stuff. I ate them in 3 bites each!
