                               Venison Heart in Marinade
  1 venison heart or you could use backstrap, tenderloin or large steak.

                                                                                                                                                                       Marinade
1 cup of red wine, 2 tbsp vinegar,1 tsp salt, 1/4 tsp pepper, 1 tsp prepared mustard,
1 onion ( diced) .

slice heart in 1/2 and remove all ducts & ventricles, wash good and lay flat in ziplock bag with marinade listed above for an hour or so.
remove from bag and put layer of Italian Cudaghi ( sausage) on heart and roll up secure with turkey skewers. Put in crock pot with the marinade and cook on high for 4 to 5 hours.  I served this with rice a roni pictures before cooking and after below.
